Background
Cabbage (kupus) is a staple in Balkan kitchens.
Young cabbage (mladi kupus) is especially loved for how it balances heavier fermented cabbage dishes. Simple and humble, cabbage transforms everyday meals into something deeply satisfying.
Today's recipe is a perfect example of this!
Braised and baked cabbage (dinstani i zapečeni mladi kupus) can be a standalone meal, or a meaty side - it does both splendidly. While young cabbage is preferred, regular cabbage works just as well—it simply needs a little more time to cook.
The cooking method includes braising young cabbage until it's tender, and then baking it until it's both soft, flavorful, and packs a slight crunch.

Expert Tips
✅ Don't Rush! The braising before baking is important. Let the slow cooking give the dish its signature tenderness.
✅ Liquid Stops Sticking. Add a splash of liquid - not more heat - if the cabbage starts to stick during the cooking.
✅ Bake Uncovered. The last portion of baking should be uncovered. This allows for that caramelized effect.

Handling
Serve braised and baked cabbage warm. It goes great with roasted meats, grilled sausages, or bread. It also works beautifully as a vegetarian main course, especially with a dollop of sour cream on top.
Store cabbage leftovers in the fridge for up to 1-2 days. The sooner you consume it, the better. Reheat gently on the stovetop - or in the oven - until warmed through.

Recipe FAQ
Sure, but not too much ahead. This dish is best consumed while still warm.
No. However, the baking gives it a deeper, caramelized, crunchy dimension.
Young / baby cabbage works best for today's dish. It's soft and releases a lot of liquid which makes the meal tender and aromatic.
However, any type of cabbage will work as long a you tend to it, and let it cook longer, until it softens.
Yes, but don't.
Adjust the amount of liquid throughout the cooking process to your liking. Also, uncover sooner while baking, so to allow evaporation.

Braised and Baked Cabbage
Ingredients
- 2 ounces oil
- 1 garlic cloves
- 1 yellow or white onion medium, diced small
- 1 head young cabbage or older cabbage
- salt and pepper to taste taste throughout to see if it's to your liking, cabbage likes salt
- 1 tablespoon stock powder or 1 bouillon cube, or 1 teaspoon Vegeta
- 1 teaspoon dill
- 2-3 tablespoons apple cider vinegar
- (Optional) 4-5 ounces (120-150 milliliters) vegetable broth
Instructions
- Sauté the base. In a large pan, heat oil over medium heat. Add diced onion and garlic and sauté until soft and fragrant, or about 5-7 minutes.
- Prepare the cabbage. Remove any tough outer leaves and the root, then slice the cabbage into ½ inch (1 cm) thick ribbons.
- Add cabbage and cook. Add the cabbage to the pan and pour in about 1 oz (30 ml) water (and a little more throughout if the cabbage stars to stick). Cook about 15 minutes, stirring occasionally, and turning the cabbage from bottom to top to ensure even cooking. (If using older cabbage, cook it longer, until it's soft and tender.) Heat oven to 400° F (200°C).
- Season and prep for the oven. Add salt, pepper, vegeta, dill and ACV. Also add 4-5 ounces (about 120- 150 milliliters) water or broth. If using the same pan for oven, cover with foil and pierce the foil in a few places. (Otherwise, transfer to an oven friendly pan and do the same.)
- Bake. Transfer to oven and bake about 15 minutes. Lower to 350°F (180°C), remove the lid and bake another 20 minutes or until the cabbage softens, the liquid evaporates, and the top becomes lightly golden. Check texture with a fork—it should be tender, but not mushy. Once done, sprinkle with fresh parsley and more dill if you like.
- Serve warm with roasted meats, grilled sausages, or bread. It also works well as a vegetarian main, especially with a dollop of sour cream.Store leftovers in the fridge for 1–2 days. Reheat gently on the stovetop or in the oven until warmed through.
