Egg Satarash: Scrambled Eggs and Veggies (Sataraš sa Jajima)

Egg sataraš is a delicious blend of tender, simmered tomatoes, peppers, and onions, enriched with scrambled eggs for a savory, comforting meal.

Ingredients
  

  • 2 tablespoons oil vegetable, olive, avocado
  • 1 yellow onion large, sliced
  • 4 bell peppers medium, diced; sweet Italian peppers or local babura peppers work too
  • 1 large tomato with juice large, skinned, diced
  • Salt and pepper to taste
  • 4 eggs whisked
  • (Optional) ½ cup water
  • (Optional) ½ vegetable bouillon cube or 1 tablespoon Vegeta (instead of salt)

Instructions
 

  • In a large pan heat oil over high. Add onion and lower the temperature to medium. Simmer until translucent, or about 4-5 minutes.
  • Add peppers, stir, and cover the pan. Simmer for 8-10 minutes.
  • (Optional) As you are simmering, add a little bit of water at a time.
  • Add tomato, water (if using) and seasonings. Stir and cover the pan. Simmer for another 10-12 minutes.
  • Add (whisked) eggs and stir. Simmer until eggs are done, about 2-3 minutes.
  • Serve immediately, or soon after making the dish. Store in an airtight container for up to 48 hours. Reheat egg sataraš using your preferred method.
