Egg sataraš is a delicious blend of tender, simmered tomatoes, peppers, and onions, enriched with scrambled eggs for a savory, comforting meal.

In a large pan heat oil over high. Add onion and lower the temperature to medium. Simmer until translucent, or about 4-5 minutes.
Add peppers, stir, and cover the pan. Simmer for 8-10 minutes.
(Optional) As you are simmering, add a little bit of water at a time.
Add tomato, water (if using) and seasonings. Stir and cover the pan. Simmer for another 10-12 minutes.
Add (whisked) eggs and stir. Simmer until eggs are done, about 2-3 minutes.
Serve immediately, or soon after making the dish. Store in an airtight container for up to 48 hours. Reheat egg sataraš using your preferred method.
