Menemen, shakshouka, lecsó... all of these are amazing dishes made with scrambled eggs and veggies! Our favorite - surprise, surprise! - is the Balkan egg sataraš.
Sataraš is a Balkan light sauce (stew) made with sautéed veggies. The most typical version of sataraš includes tomatoes, peppers, and onions. (Some people add garlic, zucchini, eggplants, or carrots.)
The dish is almost done when veggies have simmered to perfection.
At that point, we enrich the dish with eggs (like today), with rice, or eat it as is. Egg sataraš offers a comforting balance of sweet and savory, with a rich hint of warmth.
Ingredients
Here are all the ingredients you'll need to make scrambled eggs and veggies (Balkan sataraš sa jajima):
- Onion: yellow or white onion. Avoid red onion.
- Peppers: green, red, or yellow bell peppers, sweet Italian peppers. Substitute with local šilje, roge, or babura peppers.
- Tomatoes: Roma, heirloom tomatoes, or another juicy tomato kind are best. Avoid cherry tomatoes.
- Herbs and seasonings.
- Eggs.

Step 1. Heat oil and add onions. Sauté.
Step 2. Add peppers and continue sautéing.
Step 3. Add tomatoes and continue sautéing.

Egg Satarash: Scrambled Eggs and Veggies (Sataraš sa Jajima)
Ingredients
- 2 tablespoons oil vegetable, olive, avocado
- 1 yellow onion large, sliced
- 4 bell peppers medium, diced; sweet Italian peppers or local babura peppers work too
- 1 large tomato with juice large, skinned, diced
- Salt and pepper to taste
- 4 eggs whisked
- (Optional) ½ cup water
- (Optional) ½ vegetable bouillon cube or 1 tablespoon Vegeta (instead of salt)
Instructions
- In a large pan heat oil over high. Add onion and lower the temperature to medium. Simmer until translucent, or about 4-5 minutes.
- Add peppers, stir, and cover the pan. Simmer for 8-10 minutes.
- (Optional) As you are simmering, add a little bit of water at a time.
- Add tomato, water (if using) and seasonings. Stir and cover the pan. Simmer for another 10-12 minutes.
- Add (whisked) eggs and stir. Simmer until eggs are done, about 2-3 minutes.
- Serve immediately, or soon after making the dish. Store in an airtight container for up to 48 hours. Reheat egg sataraš using your preferred method.
